Mom's Cookbook

Introduction

The cookbook was put together the summer of 1983, shortly before Mom had a fatal heart attack. These are 75 of the families all time favorite recipes.

GINGER CREAMS

                           
Mix together 1/4 cup soft shortening
1/2 cup sugar
1  small egg
1/2 cup molasses
Stir in 1 tsp soda dissolved in
               1/2 cup hot water
Sift together and stir in:
2 cups sifted flour
1/2 tsp salt
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp cinnamon
   Chill dough.  Drop rounded
teaspoonfuls about 2 in. apart on
baking sheet.  While still slightly
warm, frost with

QUICK CREAM ICING:
3/4 cup sifted powdered sugar
1/4 tsp vanilla and cream to make
easy to spread.
   These are very good without
frosting.

DORA'S COCOA COCONUT COOKIES

               No baking
3 cups oatmeal fine
4 tbsp cocoa
1/2 cup coconut
nuts if desired
Mix
2 cups sugar
1/4 cup butter
1/2 cup milk
Bring to a rolling boil let cool and
add vanilla.
Pour over first part mix and drop on
wax paper size desire let cool.
No baking.

BENGSON'S GINGER SNAPS (GOOD)

1 cup sugar
1 cup shortening
1/2 cup molasses
1 egg
1 tbsp soda
1 tbsp ginger
flour for dough to make balls

SOUR CREAM COOKIES

1 cup shortening
1 1/2 cup sugar
Put 3 eggs in cup and fill with
sour cream
1 tsp soda
1/2 tsp salt
1 tsp vanilla
Enough flour to roll about 5 cups.

ROCK COOKIES (SOFT) (GOOD)

2 cup sugar
2 cup shortening
4 eggs
1 tsp soda
1 tsp nutmeg
2 tsp cinnamon
4 cup sifted flour
4 cup oatmeal
1 tbsp vanilla
1 tsp salt
1 cup raisins (cooked)
10 tbsp juice from raisins
nuts
Bake at 350-375

CHOC DROP COOKIES

1 1/3 cup flour
1/2 tsp soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup shortening
1 cup brown sugar
1 egg
2 sq choc (3 tbsp)
1/2 cup sour milk
1 tsp vanilla
1/2 cup nuts
Sift together flour, soda, baking
powder, salt and choc.  Mix brown
sugar and shortening in bowl, then
sour milk and vanilla.  Stir in
sifted four from above.  Drop by
teaspoons.

ALICE'S PEANUT BUTTER COOKIES

1/2 cup brown sugar
1/2 cup white sugar
1/2 cup butter or 3/4 cup lard
1 egg
1 tsp soda
1/2 cup peanut butter
1 1/2 cup flour
Shape into balls; press with forks;
350 degree oven.

OLD FASHIONED SUGAR COOKIES

Makes 5 doz 3 in. cookies
Bake in 400 degree oven 10-12 min
Cream:
1 cup shortening part butter
2 cup sugar
Add 2 eggs beat thoroughly
Sift together:
5 cups flour
1/2 tsp soda
1 1/2 tsp baking powder
1 tsp salt
1 tsp nutmeg
Add alternately with 1 cup
buttermilk or sour milk.  Roll out
1/8 inch thick.  Cut, sprinkle with
sugar, bake.

OATMEAL COOKIES

3 1/2 cup flour
1 tsp cinnamon
2 cup brown sugar
1 cup shortening
1/4 tsp salt
1 cup raisins
3/4 cup walnuts
1 large apple
4 eggs
1 cup oatmeal
1 tsp baking powder
1 tsp soda
1 tsp vanilla
Cream shortening, add sugar and
cream well.  Add eggs.  Grind
raisins, nuts and unpeeled apple
together.  Add fruit mixture to the
creamed shortening and sugar.  Add
rest of ingredients.  Drop by
spoonsful on baking sheet.  Bake.

SOFT CREAM JUMBLES

Mix together 1/2 cup soft shortening
1 cup sugar
Beat in 1 egg
2 cups sifted flour`1/2 tsp soda
1/2 tsp salt
1/2 cup sour milk or buttermilk
1 tsp vanilla
Mix altogether and drop by tsp.
about 2 inches apart.  Sprinkle with
sugar and cinnamon.  Bake in 400
degree oven about 12 or 15 minutes.
(To sour 1/2 cup sweet milk, add 1/2
tsp vinegar)

DROP COOKIES

1 1/2 cup brown sugar
1 cup shortening
3 eggs
1 tsp soda in 1/3 cup water
2 1/2 cup flour
1 tsp baking powder
1/2 tsp cloves
1/2 tsp nutmeg
1 cup raisins
1/2 cup dates

GOOD COOKIES

1 cup brown sugar
1 cup sour cream
2 eggs
1 tsp soda
pinch salt
flour for stiff dough about 3 cups
raisins and nuts

FILLED DATE COOKIES

1 cup shortening
2 cups brown sugar
2 eggs
1/2 tsp salt
1 1/2 tsp soda in 1/2 cup warm water
1 tsp vanilla
4 cups flour
Mix as for any other cooky.  Drop by
tsp on baking sheet, put 1/2 tsp
filling on top, and then put 1/2 tsp
dough on top of filling.  Bake.

FILLING:
10 oz pkg dates
1/2 cup white sugar
2 tbsp flour
Cover with water and boil.
I use about 1 or 1 1/2 cup gound
raisins in place of the dates.

CHOC CHIP COOKIES - 3 TIMES BATCH

1 1/2 cup shortening
3/4 cup white sugar
1 1/2 cup brown sugar
1 1/2 tsp vanilla
3 eggs
3 cups + 6 tbsp flour
1 1/2 tsp soda
1 1/2 tsp salt
nuts
choc chips

PATTERN COOKIES

4 cups flour
1 cup shortening
1/2 cup sugar
1/2 cup corn syrup(white)
1 tsp vanilla
2 eggs
1 tsp salt
1 tsp baking powder
Mix together as any other cookie.
Chill dough 2 hours.  Roll dough to
1/8 inch thickness.  Cut in desired
shapes, sprinkle with colored sugar
and bake.

GRANDMA KELTS' MOLASSES COOKIES

1 cup sugar
1 cup lard
1/2 cup molasses
1 egg
1/2 cup sour milk
1 heaping tsp ginger
1 small tsp cloves
1 level tsp soda
A little salt.
Flour to roll.
Sprinkle with sugar.

DEVILS FOOD CAKE

1 cake 2 cakes
2      4   eggs beaten light
1      2   cups sugar
1      2   cups thick sour cream
1      2   tsp soda dissolved in
                       cream
1/4    3/4 cup cocoa in hot water
1      2   tsp vanilla
1 1/2  3   cups flour

GOOD BARS

1 cup white syrup
1 cup brown sugar
Boil until sugar is dissolved.
Stir in 1 cup peanut butter
1/2 pkg corn flakes
Frost with melted choc chips
        or
Use 5 cups Rice Krispies and do NOT
frost.

KRUMBLE CAKE

1 cup brown sugar
1 cup white sugar
1/2 cup butter or shortening
2 cups flour
Mix together.  Take out 1 cup crumbs
for top.
ADD:
1 cup sour milk
1 tsp soda
1 egg
1 tsp cinnamon
1/2 tsp cloves
2 tsp vanilla

Bake slowly

BAKED PUDDING

1 egg
1 cup sweet cream
pinch of salt
2 tsp baking powder
1 cup flour

Note:  1 cup sweet milk with a
little butter or margarine may be
used in place of cream.

Bake and eat with sweetened cream on
it, with nutmeg or put in sliced
apples, rbubarb or other fresh fruit
or raisins in the batter before
baking.

ECONOMY FRUIT CAKE

2 cups hot water
2/3 cup shortening
2 cups brown sugar
2 cups raisins
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
3/4 tsp salt
(1 tsp mace can be added)
Mix above and boil 8 min.
Cool and add 2 tsp soda 3 1/2 cups
flour, and 1/2 cup nuts added with
flour.

MAMA'S LAYER CAKE

1 or 2 eggs
1 cup sugar
butter size of egg
1 cup sweet milk
1/2 tsp flavoring
1 1/2 cup flour
2 rounding tsp baking powder

FUDGE CAKE

2 1/4 cup flour
1 tsp soda
1 tsp baking powder
1/2 tsp salt
1/2 cup shortening
1/2 cup cocoa
1 1/2 cup sugar
1 tsp vanilla
2 eggs
1 cup sour milk
1/3 cup hot water
Large cake.
350 degree oven for 30-35 minutes.

SOUR CREAM CAKE

1 egg
1 cup sugar
1 cup sour cream
pinch of salt
1 tsp soda
1 1/2 or 2 cups flour
Bake in loaf pan.
Spices or spices and raisins may be
added.
1 tsp vanilla or other flavoring.

BOILED SPONGE CAKE

1 1/4 cup sugar
1/2 cup water
6 or 7 eggs
1 cup cake flour
1 tsp cream of tartar
1/2 tsp salt
1 tsp vanilla
Boil sugar and water to soft ball
stage. Beat 6 large or 7 small eggs
whites until stiff and beat syrup
into them slowly until partly cool.
Beat egg yolks until thick and lemon
colored.  Fold into white mixture
and then fold in cake flour, sifted
before measuring with cream of
tartar.  Bake 1 hour in slow oven
(300-350).  Invert pan until cool.

DROP DOUGHNUTS

3 eggs, well beaten
1 cup sugar
1/2 tsp salt
1 cup sweet milk
1/2 cup sweet cream(top milk)
2 tsp baking powder
3 1/2 cups flour
Flover to taste.  I use 1 tsp
vanilla and 1/2 tsp nutmeg.
Drop in hot fat and fry as any other
donut.

WACKY CAKE

3 cups sifted flour
2 cups sugar
1/2 cup cocoa
2 tsp soda
1 tsp salt
Mix in ungreased cake pan sift twice
together.  Make three holes in cake
mixture.
In one hole put 2 tsp vanilla.
In one hole put 2 tsp vinegar.
In third hole put 2/3 cup salad oil.
Do not stir.  Pour two cups cold
water over mixture and stir until
smooth.  Put in oven 350 for 40
minutes.

SWEET MILK DONUTS

single 2times 4times
3 1/2  7      14    cups flour
1      2      4     cups sugar
3      6      12    tbsp shortening
3      6      12    eggs
1      2      4     cups milk
3      6      12    tsp baking
                          powder
1/4   1/2     1     tsp nutmeg
1     2       4     tsp vanilla
1/2   1       2     tsp salt
Mix all together.  Chill dough an
hour before rolling.  Roll to 1/4
inch thickness and fry.

BLANC MANGE (CORNSTARCH PUDDING)

2 cups scalded milk
1/3 cup sugar
3 tbsp cornstarch
1/4 tsp salt
1/4 cup cold milk
1 tsp vanilla
Heat 2 cups milk to  scalding in top
of double boiler.  Mix dry
ingredients with 1/4 cup cold milk.
Pour slowly into scalded milk, stir
well cook 15 min. stir constantly
add vanilla.  Pour into molds rinsed
in cold water.  Serve with cream.

POWDER SUGAR COOKIES

1/2 cup butter
1/2 cup lard
1/2 tsp soda
pinch of salt
2 cups flour
1 egg
1 cup powder sugar
1/2 tsp cream of tartar
Roll in small ball, press with fork.
These are nice decorated with nuts.

DORA DILL PICKLES - For 1 qt.

1 tbsp salt
1 tbsp brown sugar
1/4 cup vinegar
Boiling water to fill jar.
Pinch mixed spices or garlic.
Put in cukes, dry ingredients,
vinegar,then dill,then last, water.
Seal hot and shake and store in cool
place.  Should not work.

PINEAPPLE DELIGHT

30 marshmallows
1 cup milk
1 large cup crushed pineapple
1/2 pint cream
14 graham crackers
Dissolve marshallows in milk on the
stove, in double boiler.  Whip
cream.  Roll crackers fine and put
1/2 in the bottom of pan 8 1/2 x
13".  When the pineapple is well
drained add to the marshmallows.
Fold in the whipped cream.  Spoon
mixture on the crumbs and sprinkle
the rest of the crumbs on top.  A
few chopped walnuts sprinkled on top
gives added flavor.  Place in
refrigerator and serve cold.  Slice
as you wish.
Cool whip may be substituted for
whipping cream.

ANGEL JELLO DESSERT

2 pkgs Cherry Jello, set to the
      sticky stage, add
1 cup whipped cream
1 lb frozen strawberries

Line 9 x 12 in. cake pan with cut up
angel food cake and pour mixture
over cake.  Top pieces with whipped
cream.  Drain strawberries (or
cherries) and add liquid to jello.
(Break cake do not cut).

ANOTHER!!!
1 pkg red jello dissolved in
1 cup hot water, add
1 pt ice cream (vanilla or
strawberry)
1 pkg frozen strawberries
Pour over broken angel food cake or
in graham cracker or pie crust.

APPLE CRISP

4 cups sliced apples
1 tsp cinnamon
1/2 cup water
Work together
2 tbsp butter
1 cup sugar
3/4 cup flour
Cut 6 or 8 apples in 1/4 in. slices.
Butter a baking dish, add apples and
pour over the water and cinnamon.
Work together the flour, sugar and
butter until crumbly.  Spread over
apple mixture and bake uncovered in
a moderate oven.  Serve warm with
whipped cream.

EGG PANCAKES

4 eggs
1 tbsp onion grated
1/3 cup flour
1/2 tsp salt
1/8 tsp pepper
1 tsp baking powder
1/3 lb cheese grated
1/3 cup fat

HARVARD BEETS

Wash and cook about a dozen small
beets in boiling water until soft.
Peel and cut the beets in small
cubes.  Pour over the beets the
following sauce.
1/2 cup sugar
1/2 tbsp cornstarch
1/2 cup vinegar
Mix sugar and starch and add
vinegar.  Cook until clear.  Let the
beets stand in this sauce 1/2 hour
on the back of the stove and add 2
tbsp butter before serving.

DATE SQUARES - 1 1/2 times

1 3/4 cup flour    2 1/2 cup+2 tbsp
1 3/4 cup oatmeal  2 1/2 cup+2 tbsp
1 tsp soda         1 1/2 tsp
1 cup brown sugar  1 1/2 cup
1 cup shortening   1 1/2 cup

FILLING
1 pkg dates
1/2 cup sugar
1/2 cup water
   or
1 can rasain pie filling
Bake in 400 degree oven for 25
minutes.

CHOCOLATE FROSTING

1 cup white sugar
1 tbsp cocoa
1/4 cup crisco
1/3 cup milk
1 tsp vanilla
1 tsp butter
Bring to a boil.
When it starts boiling, let boil 1
min.  Cool.  Then stir until ready
to spread on cake.

FOUNDATION BOILED FROSTING

1/2    1   1 1/2
3/4  1 1/2  2 1/4 cup sugar
1      2    3     egg whites
1/2    1    1 1/2 tsp vanilla
3      6    9     tbsp water
pinch  1/8  1/4   tsp cream of
                        tartar
Combine and boil sugar, water and
cream of tartar in a saucepan until
it forms a soft ball in cold water.
Pour over stiffly beated egg whites,
beating constantly.  Add flavoring
and beat with a spoon until thick
enough to hold its shape.

CARMEL FROSTING

1 1/2 cup brown sugar
1/3   cup milk
1/4   cup crisco
1     tsp vanilla
1     tsp butter
Boil same as for the chocolate
frosting.

DIVINITY FUDGE

2 cups sugar
1/2 cup white syrup
1/2 cup water
2 egg whites
1 cup chopped nutmeats
1 tsp vanilla
Boil sugar, syrup, and water until
mixture turns brittle when dropped
into cold water.  Pour slowly over
stiffly beaten egg whites.  Add
nuts and vanilla.  Beat until
mixture is creamy.  Pour in
buttered pan.

MAPLE CREAM FUDGE

4 cups brown sugar
2 tbsp flour
2 tsp baking powder
1 cup unsweetened milk (evaporated)
1 tbsp butter
1/4 tsp salt
1 tsp vanilla
Blend dry ingredients together stir
well and add milk and butter.  Stir
constantly as it will scorch easily.
Cook until soft ball forms in cold
water.  Add vanilla, let stand about
5 min. or until partly cooled.  Beat
until thick, then spread in buttered
pan.

CHOCOLATE FUDGE

2/3 cup cocoa
3 cups sugar
1/8 tsp salt
1 1/2 cups milk
4 1/2 tbsp butter
1 tsp vanilla
Combine cocoa with sugar and salt.
Add milk, bring to a boil, stirring
frequently.  Cook until a small
amount forms a soft ball when
dropped in cold water.  Add butter
and vanilla, and beat until it
thickens.  Pour into buttered pan
and cut in squares.

ZOLA'S BUNS

1 pkg yeast dissolved in water
1 cup warm water
1 egg-beaten
1 tsp salt
1/4 cup melted shortening
1/4 cup sugar

Mix with hand beater.  Add flour to
make sticky dough (appr 4 1/2 cups)
Knead in bowl.  Let rise, punch
down, let rise.  Punch down and
shape.  Let rise.
Bake 350-375 degrees - 15 to 20 min

MOTHER'S OATS BREAD

1 1/2 cups quick oats(uncooked)
2 cups boiled water
1/4 cup lukewarm water
2 tsp salt
1 cake yeast
1/2 cup sugar
5 cups flour (about)
Mix together oats, salt, and sugar.
Pour 2 cups boilin water over the
mixture and let stand until
likewarm.  Then add yeast whick has
been dissolved in 1/4 cup lukewarm
water with 1 tsp sugar.  Add 5 cups
flour.  Knead slightly.  Let raise
once in bowl.  Knead down and make
into 2 loaves.  Let raise double in
pans and bake in 350 oven for
30min---1hour.

BANANA BREAD

1 times 2
1       2   cup sugar
1/2     1   cup shortening
2       4   eggs, well beaten
1/2     1   cup sour milk
2       4   cup flour
1       2   tsp soda
1/2     1   tsp salt
3       6   mashed bananas

Makes 2 loaves.
Bake in 350 degree oven

GOLDEN CORN BREAD

1 cup corn meal
1 cup flour
1/4 cup sugar
1/2 tsp salt
4 tsp baking powder
1 egg
1 cup milk
1/4 cup shortening, soft

Bake in 425 degree oven for 20-25
min.

SCALLOPED POTATOES

8 cups raw potatoes (peeled and
                     sliced)
2 can Cream of Chicken soup
1 soup can milk
1 small onion chopped (opt.)

Mix soup and milk, pour over
potatoes, which have been placed in
a casserole. Stir.  Bake 1 1/2 hours
in a 350 degree oven.  Stir during
cooking.

Note any cream soup may be used,
cut up hotdogs, ham or hamburger may
be added.

EGG-VINEGAR PASTRY

3 cups sifted flour
1/2 tsp baking powder
1 tsp salt
1 egg beaten
3 tbsp water
1 tbsp vinegar
1 1/4 cup shortening
Sift flour with baking powder and
salt.  Cut in shortening.  Add water
and vinegar to beaten egg.  Combine
with flour mixture.  Form into a
ball.  Roll out for pie crust or use
for pastry shells.

JUICY MEAT LOAF

1 lb ground beef
1/2 cup uncooked oatmeal
1 egg beaten
1/4 cup chopped onion
1 1/2 tsp salt
1/4 tsp pepper
2/3 cup tomato juice
Combine all ingredients thoroughly.
Pack firmly into a loaf pan.  Bake 1
hour, at 350 degrees.

SALMON LOAF

1 can salmon
4 tbsp milk
2 eggs
2 tbsp melted fat
1/2 cup bread crumbs
1/4 tsp salt
pepper

Bake 20 min.

GOULASH FOR SANDWICH

Hamburger
Catsup
Tomato Juice
Fried Onion
Chili Powder
Salt and Pepper to taste.

Fry hamburger and onions, crumble
add other ingredients and simmer
serve on buns.

POPCORN BALLS

1 times 2
1       2      cup sugar
1/4     1/2    cup butter
3/4     1 1/2  tsp vanilla
1/3     2/3    cup water
1/3     2/3    cup white syrup
3/4     1 1/2  tsp salt
3       6      quarts popped corn
    (More popped corn may be used)
Boil sugar, syrup, water, butter and
salt until it spins a long thread.
Add vanilla and pour this over the
popcorn.  Shape into ball.
Delicious.  Two times this makes my
white dishpan full.  About 30. About
1/2 cup popcorn equals about 3 qts
popped corn--1 cup(a little more)
for batch.  When forming balls dip
hand in cold water.

MAMA'S WATERMELON PICKLES

10 lb. peeled rind boiled in pure
water until tender, drain the water
off and make a syrup of 2 lb.(4 1/2
cup) white sugar, 1 qt vinegar, 1/2
oz whole cloves, and 1 oz stick
cinnamon.  The syrup is to be poured
over the rind boiling hot, 3 days in
succession.  Then put in sterilized
jars and seal.

KATIE'S DILL PICKLE

13 cups water
3/4 cup salt (or less)
1 cup vinegar
Spices and garlic.
Dill
Makes about 7-8 qt.

1/4 cup vinegar
2 tbsp salt

6 1/2 cup water
3/8 cups salt
1/2 cup vinegar

VIVIAN'S CHILI CON CARNE

1 1/2-2 lbs hamburger-fried with
                        onions
1 can tomato paste (or sauce)
1 can tomatoes
2-3 cans kidney beans
1 tbsp chili powder
1 can tomato soup
salt and pepper
dash garlic salt

SANDI'S CHOC CHIP COOKIES

oven 375     yield:about 42
2 cups flour
1 tsp soda
1/2 salt
6 oz pkg semi-sweet choc pieces
1/2 chopped nuts
3/4 cup butter or marg.
1 cup brown sugar(packed firmly)
1/4 cup sugar
1 egg-2eggs(softer)
1 1/2 tsp vanilla
1/2 cup chopped nuts, (optional)
Sift flour with soda and salt.
Cream butter in mixing bowl.
Gradually add sugars; continue
creaming until light and fluffy.
Add egg and vanilla extract; beat
well.  Blend in sifted dry
ingredients gradually.  Stir in choc
pieces and nuts.  Drop by rounded
teaspoonsful onto cookie sheets.
Bake at 375 (350 is better)
for 10 to 12 min., until golden
brown.  Double batch makes large
cookie sheet of bars.

SANDI'S CHOC FROSTING

1/4 cup crisco shortening-melted
1/2 cup cocoa
1/4 tsp salt
1/3 cup milk
1 1/2 tsp vanilla
1 1/2 cup powdered sugar
Use mixer combine melted Crisco,
cocoa and salt then add milk and
vanilla.  Mix in sugar in 3 parts.
Mix until smooth and creamy.  Add
more sugar to thicken or milk to
thin, if needed for good spreading
consistency.  Good!  Use 1 1/2
batches for a 13 x 9 cake-turned
out.

PEANUT BUTTER CUPS

1 cup creamy peanut butter
1/2 cup mar or oleo
2 scant cups powdered sugar
2-3 pkg choc bark
Mix together-form into little
balls-flatten some.  Melt choc bark,
place some in small paper cup (small
cup cake papers), add peanut butter
ball, press a little, cover with
more choc.  Can be frozen

CARMEL ROLLS

Dough: from scratch or use frozen
                        dough.
Shape: by rolling, spread with
butter and light sprinkling of brown
sugar; roll up and cut; place in
greased pan or shape by forming
dough into small balls; place in
buttered pan that has brown sugar
sprinkled in bottom.  Sprinkle of
cinnamon optional.
Let rise.
Carmel: depends on size of pan-
for 9 x 13 use about 1 cup cream and
1 cup brown sugar -mix; pour over
raised rolls; bake at 350 for 20-25
min.  For 9" or 8" pan use 1/2 cup
cream and 1/2 cup brown sugar.
Sprinkle of cinnamon optional.

CHOCOLATE ICEBOX COOKIES

Dough can be frozen.
Cream
1 cup butter or shortening
1 cup sugar
Add 2 eggs(well-beaten)
Then beat 2 minutes
Add alternately
5 tbsp milk
3 cups flour
2 tsp baking powder
1/2 tsp salt(scant)
Add
2 tsp vanilla
4 squares melted chocolate or
           4 tbsp cocoa
Then form dough in long rolls.
Refrigerate over night, slice thin
and bake at about 350.

ANGEL COOKIES

1/2 cup white sugar
1/2 cup brown sugar
1 cup shortening
1 egg
2 cup flour
1/2 tsp salt
1 tsp vanilla
1 tsp soda
1 tsp cream of tartar
Mix in order given.  Shape in balls,
dip in cold water, then dip in
sugar.  Bake at 350 to 375 for about
15 min.

CHOC PINWHEEL COOKIES

1 cup butter or margarine
1 1/4 cup sugar
1 tsp vanilla
1 1/4 tsp baking powder
1 egg
2 1/2 cup flour
1/4 tsp salt
Mix thoroughly.  Divide in half.
Add 1 oz unsweetened choc, melted to
one half of dough.  Chill.  Roll,
chill.  Slice.  Bake at 375 for 8 to
10 min.

ANN'S CHEESE CAKE

1/2 time 1
1        2 cup sugar
3        6 eggs
1/2      1 cup cream
1 pt     1 qt cottage cheese
Mix together
cinnamon for on top

1/4 recipe makes 9 x 9 pan.
Half of this should be enough for 9
x 12 or 8 1/2 x 13 pan.

Dough: Bisquick biscuit dough,
2 cups bisquick and 1/4 cup cold
water for 9 x 13 pan.

APPLE CRUMB PIE

1 9 inch unbaked pie shell
1 can pie filling
1/2 cup flour
1/4 cup sugar
1/4 cup butter

Combine flour, sugar, and butter
until crumbly.  Sprinkle over
apples.  Bake 400 for until done.

CHOC CREAM DROPS (BON BONS)

Melt 1/2 cup butter,
add 2 lbs powdered sugar,
1 can Eagle Brand milk
1 7 oz pkg coconut(fine)
1/2 cup nuts

Chill until firm, roll in small
balls and chill.

COATING:  Melt 6 oz choc chips 1/2
block Parafin Wax and 1 sq Bakers
Choc in double boiler.  Dip.

Agnes' KUCHEN

3 cup flour
3 tsp baking powder
1/2 tsp cream of tartar
2 eggs
1/2 cup butter
3 tbsp oil
enough milk to make soft dough

Roll thin size of pie pan.

FILLING:
1 cup heavy cream
2 eggs
1/2 cup sugar
cinnamon

Mix another 1 cup sugar and 1/2 tsp
cinnamon.
Put some custard on rolled dough.
Sprinkle with cinnamon and sugar.
Bake 350 until brown.  Cut into
pieces.  Can use fruit instead of
custard.
Use single batch dough--double batch
filling.                                .

BUTTER BUTTER COOKIES


1 cup (2 sticks) butter
1/2 cup sugar
1 egg
1 tsp almond extract or
          vanilla or lemon
2 1/3 cup all-purpose flour
Cream butter, gradually add sugar
and beat until light and fluffy.
Beat in egg and flavoring.    .
Gradually blend in flour.  Fill
cookie press with 1/4 of dough at a
time.  Form desired shapes on
ungreased cookie sheet.  Bake in
preheated 350 oven 8 to 10 min.
Remove immediately to wire rack to
cool.  About 7 doz.

MACAROON BARS

1 cup butter or marg
2 cup sugar
4 eggs
1/2 cup cocoa
1 tsp vanilla
1/4 tsp salt
nuts (opt)
2 cups flour
Mix and put 1/2 mixture in bottom of
jelly roll pan.
Mix 1 pkg macaroon mix with 3/4 cup
water.
Spread over brownie mixture; add
remaining brownie mixture.
FROSTING
2 cup white sugar
1/2 cup milk
1/2 cup oleo or butter
1 cup choc. chips
1 tsp vanilla
Mix sugar, milk and butter in
saucepan and bring to boil.  Stir in
vanilla and choc chips until
dissolved.  Continue stirring until
thick enough to spread.

CHOCOLATE CREAM WAFERS

1 times  2
2 1/4    4 1/2 cups flour
1/3      2/3   tsp cinnamon
1 1/2    3     tsp soda
1/2      1     tsp salt
4        8     tbsp cocoa
1/2      1     cup butter or
                    shortening
1        2     cup sugar
2        4     well beaten eggs
2        4     tbsp thin cream
                     or milk
1        2     tsp vanilla
Sift together dry ingredients (3
times) Cream butter, add sugar,
cream thoroughly, add eggs, choc.
Cream and beat well.  Add flour
gradurally, beat smooth.  Roll to
desired thickness on floured board,
cut into sqs., sprinkle with sugar.
Bake in hot oven 6 min. (350 oven
6-10  min). These burn easily.
Note: Leave sugar off cookies and
frost.

KATHY'S COOKED SALAD DRESSING

12 tbsp sugar
4 tsp salt
4 tsp prepared mustard
4 eggs
3 cup milk
16 tbsp vinegar

Mix in order named and blend
thoroughly after each addition.
Cook over hot water.
Add 4 tbsp butter and blend
thoroughly.  Cool.  Good for
potato salad.

KATHY'S DANISH MEAT BALLS

Mix:
2 lbs hamburger
1 1/2 cups chopped onions
2 eggs, slightly beaten
1 tsp ground nutmeg
1 tsp salt
1/2 tsp black pepper
Form into balls 1 1/2 inches in
diameter.  Roll the meatballs in 2/3
cup flour seasoned with 1/4 tsp salt
and 1/16 tsp pepper.  Brown on all
sides in 1/4 cup cooking fat.  Add 1
cup condensed beef bouillon and 1
bay leaf.  Cover and simmer for 30
minutes.  Remove meat balls.  Blend
in 3 tbsp flour and brown.  Stir in
1 1/2 cups condensed beef bouillon.
Cook, stirring constantly, until
medium thick.  Serve meatballs and
gravy with mashed potatoes.  Serves 6.

SUGARLESS JAM

1 cup crushed pineapple
        (unsweetened) drained
1 cup dates
1 to 2 lemons (juice only)
       or 4 to 6 tbsp RealLemon
1/4 cup dried apricots
In blender, mix all ingedients
thoroughly.  Keep refigerated.
(Makes 28 servings of 1 tbsp each.
Contains 24 calories per serving.)

POUND CAKE

Temp 300 bake 1 1/4 - 1 1/2 hrs
Makes 1 loaf, 8 1/2 x 4 1/2 x 2 1/2
2  times   1
4          2       cups sifted flour
2          1       tsp baking powder
1          1/2     tsp salt
2          1       cups butter
2c+4tbsp 1c+2tbsp  sugar
3          1 1/2   tsp vanilla
1/4        1/8     tsp ground mace
8          4       eggs
1/2        1/4     cup milk or water
1          1/2     tsp grated orange
                      rind(optional)
Beat egg and sugar mixture very
thoroughly, also after addition of
each egg until lt and fluffy.  All
ingredients at room temp.  Measure
all ingredients before you start
mixing.  Heat oven.  Prepare pan
before mixing is started.  Sift
together-flour, baking powder, and
salt.  Cream butter, sugar, extract,
rind, and mace until very light and
fluffy.  Add eggs-one at a time,
beat thoroughly after each one.  Add
dry ingredients alternately with
milk or water,  beginning and ending
with dry.  Blend smooth.  Spoon
batter into loaf pan.  Bake in slow
oven(300) 1 1/4 to 1 1/2 hours until
cake springs back when surface of
center area is touched lightly.
Cool cake in pan on rack about 20
min.  Remove from pan.  Cool
thoroughly before storing.  Do not
frost.  To serve, cut in thin
slices.

SAUTEED ZUCCHINI

1 cup chicken broth or water
1 clove garlic, crushed or minced
        garlic to equal
1/8 tsp ginger
1/2 tsp salt
1/8 tsp pepper
Bring to boil.
Add to above mixture 2 or 3 small,
firm zucchini-1/8 inch slices.
Simmer until tender.
